Does this come with the entire accessory kit listed it the bottom of the listing or are just the P0001 accessories included?

What does the Renault adapter do for me? Will I need that or am I fine to get by with what gets delivered with the unit itself?

Renault adapter is for some Renault cars key programming.
You don't need to buy it, it's on sale now, buy X300 DP Plus A+B+C configuration get one Renault adapter for free.

To echo Will's question below, will OBDSTAR X300 DP Plus (A+B+C) Full Configuration work to reset TPMS for all four tires after a tire rotation as well as adjust odometer on 2014 Cadillac ATS? I'm trying to figure out what I can use this for at my garage when problem's arise like I'm having right now with this customer's vehicle.

Unfortunately, it cannot reset TPMS for 2014 Cadillac ATS, but it can adjust odometer on 2014 Cadillac ATS.
